Inspired by butcher Ryan Farr’s memories of the juicy franks of his midwestern youth, here are bacon-studded hot dogs, nitrate-free, smoked but not cured, and snappy as can be. Wrap them in more bacon and grill them, serve ‘em plain or with mustard, and enjoy how juicy and guilt-free they are. Farr only uses ethically-raised meat, and butchers whole animals himself, so there’s no waste. It’s a practice that’s garnered him attention from the New York Times, among others.
