Cream, beer, chicken, dried apricots and mustard seeds comprise this excellent sausage crafted in the style of a boudin blanc. It is juicy and plump thanks to a generous splash of beer made by San Francisco’s Magnolia Brewery and because of chef-butcher Ryan Farr’s attention to detail. It’s equally good pan-seared or grilled, and is wonderful (naturally) with a pint.
