Paddlefish, the most assertive of all American caviar, has a small gray bead and a sharp, briny finish similar to its distant Caspian cousin. Pairs beautifully with anything from smoked fish and fresh oysters to a glass of Rosé. Caught according to sustainable fishing practices in the vast Mississippi-Missouri river systems.

Bellwether Crème Fraiche, a classic French-style cultured cream, has a rich, nutty flavor with an appealing tart edge. Made by Bellwether Farms, makers of award winning artisan cheeses. Rounds out the caviar's flavor without overpowering it.

Shelf life: Unopened and refrigerated, your caviar will last 4-6 weeks. Once you open it and expose it to air, you should eat it within 4 days. Recommended storing temperature is 28-32 degrees, keep in the coldest part of the refrigerator between two ice packs.
