COS is the leading producer of natural wines in Sicily. Their reds redefined Sicilian wine and let the world know that the island off the boot can create elegant, nuanced wines. Using only local grapes and a non-interventionalist approach in the vineyard, they craft beautiful white wines that taste distinctly of the Mediterranean.

Why to buy: This is the vintage that launched this small estate onto the international scene; the wine has been named “Most Memorable Glass” by Time Out New York.
Nose, palate and pairing: Ruby red to garnet with aromas of cherries, tobacco, leather and spice. On the palate, it’s rich, but not heavy, and has notes of ripe black fruit, minerals and earth. Drink this wine with roasted game and cured meats.
The backstory: Distinctive notes of mineral and earth begin in terracotta amphorae, in which the winemakers allowed this Nero d’Avola juice to age for 12 to 18 months before bottling it. By choosing to age their wines in these ancient winemaking vessels, the winemakers express their unconventional spirit and dogged commitment to crafting authentic Sicilian wines.
Varietals: 100% Nero d’Avola
