Oliver Bernand, Domaine de Chevalier's owner, says that the wine maker is only the facilitator. Terroir is, by far, the most important thing. The proof is in his L'spirit de Chevalier, a white wine made from the exact same part of the vineyard and with the same meticulous care as the Grand Cru of the same name. The only distinction? Younger vines. It's a hard-to-find bottle for true aficionados.
