Over the span of a century, Acme Salmon has grown from a single “wagon jobber” (basically, a pick-up and delivery cart) into one of the most popular smoked fish brands in North America. In its early years the company sold its products anonymously in New York’s finest specialty stores, including Zabar’s, Russ and Daughters, and Barney Greengrass. Today, its offerings — from cold-smoked salmon and lox to hot-smoked Alaskan black cod — are available across the nation under the Acme, Blue Hill Bay, and Ruby Bay brands. Except for sturgeon, all of Acme’s fish is certified kosher. The company also owns and operates the largest single smokehouse in the U.S., located in the Greenpoint neighborhood of Brooklyn, N.Y.
