Fennel seed is best known for its delicate anise and licorice notes, but it’s actually very flexible. It’s as wonderful mixed with fettucini, broccoli rabe, garlic and Italian sausage as it is pressed between the breast and skin of a chicken before roasting. Like dill, it’s also wonderful with seafood, and can be added to salt, sugar, fruit zests and thyme to make a wonderful salmon gravlax.
