Wild asparagus and citrus trees grow among the 9,000 olive trees at Pianogrillo’s farm in eastern Sicily, infusing their bright flavors and essence into the soil around them. This superb oil is made from the single olive varitey, Tonda Iblea, named after the mountains that surround the region. The olives cold-pressed onsite within 12 hours of harvesting, which results in a light gold-green oil with a moderate spiciness and aromas of grass and green tomatoes.
