We love to eat this creamy, golden roe right out of the tin—lingering on its satisfying, briny pop and delicate, buttery nuance. Golden Char caviar comes from the Great Lakes in Northern Ontario, where Tyler Gray’s caviar-maker hand-processes the tiny eggs (about half the size of trout roe) and picks only the most beautiful golden pearls to season with cherry-wood-smoked fleur de sel. The result is a complex, nutty delight, with a deep round finish that doesn’t overpower the delicate flavors of the roe.
