Each April, Conservas Ortiz's fishermen set out into the Bay of Biscay to trawl for anchovies at the peak of the season. Once their catch—swept up in traditional net circles to prevent bruising—hits the shore, it's cleaned, razor-filleted using a six-step process, and placed in barrels to age at least six months, intensifying the anchovies' pungent, saline flavor even further.
